Here is the process…
2 cups all-purpose gluten-free flour mix
2 teaspoons baking powder (exclude if in flour mix)
3⁄4 teaspoon xanthan gum (exclude if in flour mix)
1⁄2 teaspoon salt
1⁄4 cup poppy seeds
2 tablespoons lemon zest
1 cup granulated sugar
1⁄2 cup canola oil
3⁄4 cup water
Preheat oven at 350 degrees.
Mix all ingredients together in bowl. Grease a muffin tin or line with paper liners. Bake 20-25 minutes or until toothpick comes clean.
